After attempting my own, I decided to go back for the real deal soba noodle salad today. Just one more and I get a free one!

I’m behind on my super-vegetables though. Yesterday’s was carrots and I had some in this salad. Today’s is leeks: I’m going to find a way to incorporate them in dinner!
